The objective is to develop a rigorous economic understanding of American elderberry production, processing, markets, and consumption to support scaling elderberry value chains in the U.S.
The Project
- Determine elderberry producers’ current production and marketing practices, and identify their perceived constraints and opportunities in the production and marketing of elderberries.
- Develop an understanding of consumer preferences for elderberries and derivative value-added products.
- Identify the farm-level costs and benefits of elderberry production given different farm characteristics and management practices.
- Assess the economic feasibility of different elderberry cultivars and weed and insect management practices.
