Production, Processing, and Marketing

Economic Understanding

The objective is to develop a rigorous economic understanding of American elderberry production, processing, markets, and consumption to support scaling elderberry value chains in the U.S.

The Project

  1. Determine elderberry producers’ current production and marketing practices, and identify their perceived constraints and opportunities in the production and marketing of elderberries.
  2. Develop an understanding of consumer preferences for elderberries and derivative value-added products.
  3. Identify the farm-level costs and benefits of elderberry production given different farm characteristics and management practices.
  4. Assess the economic feasibility of different elderberry cultivars and weed and insect management practices.
